Pork Tacos with Spicy Watermelon Salsa


Ingredients:
4 boneless pork ribs (1¼ lb)
24 extra-thin or 12 typical corn tortillas
1½ cups chopped watermelon
2 fresh peppers, finely chopped
¼ cup snipped fresh cilantro
½ tsp salt
½ tsp sugar
½ tsp garlic powder
½ tsp chili powder

Directions:
For salsa, in medium bowl combine melon, chopped peppers and cilantro. Set aside.
For rub, in small bowl combine salt, sugar, garlic and chili powder. Rub on ribs to coat. Grill, covered, directly over medium heat for 10 to 12 minutes, until 145̊ F turning once. Meanwhile, wrap tortillas in foil. Warm on grill during last 5 minutes of cooking time for ribs, turning once.
Transfer ribs to cutting board. Let rest 2 minutes. Slice meat. Serve with tortillas and watermelon salsa.
Total time: 20 minutes
