Smoked pork ribs

Ingredients:
Pork ribs (duh)
Onion, red peppers, eggplant
Olive oil
6 peaches (or more)
12 pack of beer (or more)
1 bottle white wine
Dry wood at the beginning
Fruit-wood chips soaked in water for at least 30 minutes

Rub Mix:
1 cup Cumin
2 cups Garlic powder
2 cups Onion powder
½ cup White pepper
½ cup Nutmeg
½ cup Paprika powder
½ cup Ground rosemary
1 cup Chipotle powder
1 cup Salt

Preparation:
The day before cooking separate the membrane attached to the bone side of the ribs. The membrane blocks the uptake of smoke and creates a barrier to your seasonings. To remove the membrane, lay the ribs on a flat surface meat side down. Take a sharp knife and begin peeling the membrane from one corner near the bone.
Apply rub mix to ribs until they look happy Wrap the ribs in plastic wrap and place in refrigerator overnight to let the dry rub soak into the meat. Remove the ribs from the refrigerator approximately 1 hour before cooking.
Fire up the BBQ  at least 4 hours before you are going to be hungry and open the first can of beer.
Once the grill is hot, put the ribs on the edge of the grill. Wait for the smoke to start and sear the ribs for 5 minutes on each side. You should not have any direct heat under the ribs.
Walk away from the grill and work on a beer. After beer #3, check the temperature – it should be 275 and no hotter (good luck with checking). Cook for 3 hours - do not speed up the cooking time by raising the temperature - your pork will end up tough and chewy.
If you finish beer #12 after the first 3 hours, that means you are drinking too fast – grab another 12 pack and relax. Chop up your vegetables into big pieces, roll in olive oil, salt and pepper and place them on a foil tray and grill them for 1 hour.
Total cooking time for ribs is around 4 hours. Ribs are done when they are tender enough to easily pull away from the bones. When done, remove ribs to rest for approximately 10 to 15 minutes before cutting them. In the meantime prepare refreshment for the ladies: cut peaches in half and remove the pits, then grill for 5 minutes on each side. Once ready, remove and cut in to slices.  Place in wine glasses and top with very cold wine. Now, you can continue with beer and the ladies will do the rest.
